  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 large poblano peppers (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or coconut milk)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add minced garlic and diced poblano peppers; cook until softened (3-4 minutes).
  3. Add chicken breasts and cover with chicken broth. Simmer for about 20 minutes until chicken is cooked through.
  4. Remove chicken, shred it using two forks, and return it to the pot.
  5. Stir in cream or coconut milk, cumin, and chili powder. Simmer for an additional 10 minutes.
  6. Finish with lime juice and chopped cilantro before serving.
