  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup orzo pasta
  • 1 cup bell peppers, chopped
  • 2 cups fresh spinach
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or basil, chopped
  • Juice of 1 lemon

Instructions

  1. Prep your ingredients by chopping vegetables and mincing garlic.
  2. In a large pot over medium-high heat, heat olive oil and sauté the seasoned chicken until golden brown (5-7 minutes). Remove and set aside.
  3. In the same pot, add onion and garlic; cook until softened (2-3 minutes). Add bell peppers and cook until tender (3-4 minutes).
  4. Pour in chicken broth and orzo; bring to a boil then reduce to simmer for about 10 minutes until orzo is al dente.
  5. Return chicken to the pot along with any juices; stir in spinach until wilted (1-2 minutes).
  6. Finish by squeezing fresh lemon juice and tossing with herbs before serving.
