  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil or butter. Once hot, sauté the diced chicken seasoned with salt and pepper until golden brown (5-7 minutes).
  3. Add the broccoli florets and cooked rice to the skillet, stirring until well combined.
  4. Pour in the chicken broth and cream of mushroom soup, mixing gently. Let it simmer for about 10 minutes until the rice absorbs some liquid.
  5. Sprinkle shredded cheddar and mozzarella cheese on top. Cover with a lid and cook for another 5 minutes until the cheese melts.
