  • 1 cup potatoes, diced
  • 1 cup corn kernels
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 6 cups low-sodium chicken stock
  • Juice of 2 limes
  • 2 tsp olive oil

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onions until translucent (about 5 minutes).
  2. Add minced garlic; cook until fragrant. Introduce bone-in chicken thighs and sear on both sides until golden brown (approximately 6–8 minutes).
  3. Mix in chopped carrots, potatoes, and corn; stir to combine.
  4. Pour in the chicken stock until everything is submerged. Bring to a gentle boil, then reduce heat to simmer for about 30–35 minutes or until the chicken is tender.
  5. Remove the chicken from the pot; shred it using two forks and return it to the soup. Stir in lime juice and fresh herbs before serving hot.
