  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 3 cups tortilla chips
  • 2 green onions, chopped
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground meat until fully cooked. Stir in taco seasoning and cook for an additional minute.
  3. Mix in the rinsed black beans and diced tomatoes with their juices. Simmer for about five minutes.
  4. In a greased baking dish, layer tortilla chips, half of the meat mixture, and half of the cheese. Repeat the layers and top with remaining cheese.
  5. Bake for 25-30 minutes or until bubbly and golden brown.
  6. Garnish with chopped green onions and serve hot with sour cream.
