  • 8 oz penne or fettuccine pasta
  • 12 oz spicy or mild smoked sausage, sliced
  • 1 cup bell peppers (red and yellow), chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside, reserving some pasta water.
  2. In a large skillet over medium heat, sauté the sliced sausage for about 5-7 minutes until browned.
  3. Add the chopped onions and bell peppers; sauté for an additional 3-4 minutes until softened.
  4. Stir in the minced garlic and Cajun seasoning; cook for 1-2 minutes until fragrant.
  5. Pour in the heavy cream, stirring to combine; let it simmer for 3-5 minutes until slightly thickened.
  6. Toss the cooked pasta into the skillet, mixing well; add reserved pasta water if needed to loosen the sauce.
  7. Serve hot topped with Parmesan cheese and fresh parsley.
