  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 8 oz penne or fettuccine pasta
  • 1 cup heavy cream
  • 1 cup bell peppers (chopped; use a mix of colors)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese

Instructions

  1. Boil salted water and cook pasta until al dente; drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Cook seasoned chicken breasts until golden brown and cooked through (6-7 minutes per side). Remove from skillet and slice.
  3. In the same skillet, add bell peppers and onions; sauté for 5-6 minutes until tender. Add minced garlic during the last minute.
  4. Pour in heavy cream, stirring to combine; let simmer for 3-5 minutes until thickened.
  5. Toss cooked pasta with the sauce in the skillet. If too thick, add reserved pasta water until desired consistency is reached.
  6. Finish by mixing in grated Parmesan cheese and serve hot.
