  • 2 filet mignon steaks (6 oz each)
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 3 garlic cloves, smashed
  • 2 sprigs fresh thyme or rosemary
  • 2 tbsp unsalted butter
  • 1/4 cup red wine (optional)

Instructions

  1. Take the filet mignon out of the fridge 30 minutes before cooking to reach room temperature. Pat dry with paper towels.
  2. Season both sides generously with salt and pepper.
  3. Heat a heavy skillet over medium-high heat until hot. Add olive oil and swirl.
  4. Sear each steak for about 4-5 minutes on one side until a golden crust forms.
  5. Flip steaks, add smashed garlic and herbs, then spoon melted butter over steaks as they cook for another 4-5 minutes.
  6. Check doneness using a thermometer; remove from heat at 130°F (54°C) for medium-rare. Let rest for at least 5 minutes before serving.
