  • 4 ears fresh sweet corn, kernels removed
  • 1 cup red bell pepper, diced (about 1 medium pepper)
  • 1/2 cup red onion, finely chopped (about 1 small onion)
  • 1/2 cup fresh cilantro leaves, chopped
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. 1. Shuck the sweet corn and remove all husks and silk strands.
  2. 2. Dice the red bell pepper and finely chop the red onion.
  3. 3. Mince the fresh cilantro leaves.
  4. 4. In a bowl, whisk together olive oil, lime juice, salt, and pepper until well combined.
  5. 5. In a large mixing bowl, combine corn kernels, diced veggies, minced cilantro, and dressing; stir until well coated.
