  • 2 pounds bone-in chicken thighs
  • 1 large sweet onion, sliced
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon fresh thyme or rosemary
  • 2 cups carrots and bell peppers, chopped (mixed)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or brown sugar
  • Salt and pepper to taste

Instructions

  1. Grease the slow cooker with nonstick spray.
  2. Heat oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 4-5 minutes until golden brown.
