  • 1 cup long grain rice
  • 2 cups chicken broth
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 cup frozen peas and diced carrots

Instructions

  1. Prep the ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, warm the olive oil and sauté the onions until soft (about 5 minutes).
  3. Add the chicken breasts to the pot; season with salt, pepper, cumin, and paprika. Sear each side until golden brown (about 7 minutes per side).
  4. Stir in the rice until coated with oil and spices, then pour in the chicken broth while scraping up any browned bits.
  5. Bring to a boil, then reduce heat to low and cover tightly; simmer for about 20 minutes until liquid is absorbed.
  6. In the last 5 minutes of cooking, add frozen peas and diced carrots. Fluff with a fork before serving.
