  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 4 tbsp olive oil
  • 1 lb baby potatoes, halved
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, coat chicken with olive oil, minced garlic, lemon juice, salt, pepper, thyme, and rosemary.
  3. In another bowl, toss halved baby potatoes with olive oil, salt, pepper, and any remaining herbs.
  4. Arrange seasoned chicken on one side of a baking sheet and spread potatoes on the other side.
  5. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
