  • 4 lbs beef short ribs
  • 2 medium yellow onions, chopped
  • 6 cloves garlic, minced
  • 2 cups beef broth (low-sodium)
  • 3 tbsp tomato paste
  • 1 cup red wine (full-bodied)
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 tbsp sugar (brown sugar preferred)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C). In a large Dutch oven, heat oil over medium heat and sear beef short ribs on all sides until golden brown, about 3-4 minutes per side. Remove ribs and set aside.
  2. Add onions and garlic to the pot; sauté until onions are translucent (about 5 minutes).
  3. Return short ribs to the pot. Stir in tomato paste until well coated. Pour in red wine and beef broth, scraping up any browned bits from the bottom.
  4. Add sugar, thyme, and rosemary; bring to a simmer. Cover tightly with a lid.
  5. Braise in the preheated oven for about 3 hours or until meat is fork-tender.
