  • 4 large bell peppers (any color)
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded mozzarella cheese
  • 2 tsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian herbs (basil, oregano)

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds.
  2. In a skillet over medium heat, heat olive oil and cook the ground meat until browned. Drain excess fat.
  3. Stir in cooked rice, diced tomatoes, salt, pepper, and herbs until combined and fragrant.
  4. Generously fill each pepper with the meat mixture and place them upright in a baking dish.
  5. Cover with foil and bake for 25 minutes. Remove foil for the last five minutes to melt cheese on top.
